Ingredients

  • 1/3 pound bacon
  • 3 Tablespoons butter
  • 1 medium onion, finely chopped
  • 2 large potatoes, peeled and cut into 1/2" dice
  • 5 1/2 cups chicken stock
  • 4 Bay leaves
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 head of cabbage, cored, thinly sliced

Step 1

Crisp the bacon; break into chunks. Set aside.
In a heavy stock pot, melt butter. Add onion and sauté, stirring until softened, about 3 minutes. Add potatoes and sauté 2 minutes more. Add stock, bay leaves, S&P, and bring to a boil. Reduce heat to moderately low, cover and simmer until potatoes are soft, about 8-10 minutes. Add cabbage and simmer another 5 minutes. Discard bay leaves. Working in batches, use a blender to puree soup--but not too smooth. Return to pot, stir in bacon, and enjoy!
