Savory Stuffed Sole

Ingredients
- 2 T butter
- 1 lb filet of sole or flounder
- 4 oz crabmeat, drained and flaked
- 2 shallots, chopped
- 1/2 t salt
- white pepper
- 2-3 T fine, dry breadcrumbs
- 1/4 c white wine
- 1/2 c heavy cream

Preparation
Step 1
Dot bottom of shallow glass baking dish with one tablespoon butter. Wash and dry fish filets.
Sprinkle with salt and pepper and place half of the filets in a single layer in the baking dish.
Sprinkle with lemon juice.
Place crabmeat in an even layer over filets, sprinkle with chopped shallots and wine.
Place remaining filets over crabmeat, sprinkle lightly with remaining salt and pepper and bread crumbs.
Dot with remaining butter and sprinkle with lemon juice.
Pour cream around edges of dish, being careful not to moisten crumbs.
Bake in a 375 degree F oven for 12 - 15 minutes,or until fish flakes easily when tested with a fork.
