Ingredients
- 4 # 8 oz AP
- 4 t salt
- 8 oz sugar
- 18 oz eggs
- 8 oz butter
- 16 oz marsala wine

Preparation
Step 1
Sift flour, salt and sugar in a mixing bowl.
Add the eggs and butter and mix with a paddle attachment until coarsely mixed.
Add marsala wine and mix until it forms a ball. Let rest over night.
Roll out to 2 mm and cut with a round cutter. Wrap at let rest.
Spray cannoli molds with pan spray. Roll round dough out to an oval shape and wrap around cannoli form.
Spread some egg wash on end of dough to secure.
Fry cannoli dough in oil at 180C until golden, 2 minutes or so. Remove form from oil and let cool before taking out the cannoli form. Let cool completely before storing.
Can be kept in an airtight container for up to 1 week.
