Ingredients

  • 1 quart cabbage pieces
  • 3 cups each cauliflower and bell pepper pieces
  • 2 cups each cucumber or green tomatoes and small onion pieces
  • 3 tablespoons pickling salt
  • 2-1/2 cups cider vinegar
  • 1/2 cup brown sugar
  • 2 teaspoons yellow mustard seeds
  • 2 teaspoons dry mustard
  • 1 teaspoon ground turmeric
  • 1 teaspoon celery seed
  • 1 teaspoon ground ginger
  • 2 teaspoons hot pepper flakes
  • 1/4 teaspoon ground coriander

Preparation

Step 1

In bowl toss vegetables with salt. Let stand 3-4 hours then drain and rinse. Drain them again. Bring remaining ingredients to boil in large pot. Reduce heat and let mixture simmer 5 minutes add vegetables to pot. Bring mixture back to a boil, stirring occasionally. Reduce heat and let mixture simmer 10 minutes. Using slotted spoon pack vegetables into pint jars leaving 1/4 headspace. Cover vegetables with pickling liquid close jars with hot two piece caps. Process jars for 10 minutes in boiling water bath. Store cooled jars in cool, dry dark place for at least 3 weeks.
