Ingredients
- 1 T unsalted butter or olive oil
- 1 yellow onion, chopped
- 1 C long grain basmati rice
- 1 ¾ cup water
- 1 ½ t kosher salt
- ¼ c sliced scallions
- 1 T minced fresh parsley

Preparation
Step 1
Cook butter (or oil) and onion over medium heat until translucent, about 3 mins. Add rice and toss until all the grains are coated with butter. Add water and salt, cover and cook until the water is absorbed and the rice is tender, about 15-20 minutes. Turn off the heat and allow to sit covered 5-10 minutes. Add scallions and parsley, fluff with fork and serve.
