Ingredients
- 2 pounds squid, cleaned
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 cup bread crumbs
- 1/3 cup fresh parsley, finely chopped
- 1/2 cup Romano cheese
- 4 cups Marinara sauce
- 1 cup white wine
- 1/4 cup roasted red peppers, chopped, for garnish

Step 1
Separate the squid bodies from the tentacles. Finely chop the tentacles and set aside.
In a large saute pan over medium heat, heat the oil. Add the garlic and cook until brown, about 5 minutes. Remove thee garlic and discard. Add the tentacles. Saute until golden brown. Remove from the heat and let cool. Add the bread crumbs, parsley and cheese. Mix thoroughly.
Carefully stuff the squid bodies with the bread crumb mixture.Stuff loosely, since the squid will shrink when it cooks. Hold the squid bodies closed with toothpicks.
In a large, heavy saute pan, over medium heat, combine the Marinara sauce and wine. Add the squid and lower the heat. Simmer for 30 minutes, turning softly and basting occasionally.
Serve over your favorite pasta.
