Strawberry White Chocolate Tiramisu

This scrumptious dish is inspired by the classic Italian dessert but with a summery twist of fresh strawberries and white chocolate. It can also be made a day ahead.

- 2 lb (1 kg) fresh strawberries, hulled and sliced
- 3/4 cup (175 mL) lemonade or cranberry juice
- 1/2 cup (125 mL) granulated sugar, divided
- 8 oz (227 g) white chocolate, divided
- 2 cups (500 mL) 35% whipping cream
- 1 tub (475 g) mascarpone cheese, room temperature
- 1 tsp (5 mL) vanilla extract
- 24 –36 ladyfinger cookies
- Additional strawberries for garnish (optional)

Preparation
Step 1
Gently stir the strawberries with the lemonade and 1/4 cup (60 mL) granulated sugar in a large bowl. Let stand for 30 minutes. Strain the strawberries, reserving the juices separately.
Meanwhile, melt 7 oz (210 g) white chocolate in a heat-proof bowl over simmering water until smooth. Cool slightly.
Beat the whipping cream until very thick; set aside.
Beat the mascarpone cheese with the melted chocolate, remaining sugar and vanilla in a separate bowl until smooth and light. Fold in the whipped cream until uniformly combined.
Dip half of the ladyfingers into the reserved strawberry juices and make an even layer in the bottom of a 9 x 13 x 2-inch (3 L) baking dish. Top with half of the strawberries in an even layer.
Spoon half of the mascarpone mixture over top and smooth the top. Repeat the layers once.
Grate the remaining white chocolate using the fine holes on a box grater. Sprinkle over the dessert and garnish with additional strawberries (if using). Chill for at least 1 hour or up to 1 day before serving.
