Ingredients

  • Pastry:
  • 1 cup water
  • 1/2 cup (1 stick) butter or margarine
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup flour
  • 4 eggs
  • Filling:
  • Prepare custard mix according to package directions
  • 1 envelope custard mix
  • 3 tablespoons sugar
  • 2 cups milk

Step 1

Preheat oven to 425 degrees. Grease cookie sheets.

In saucepan, over medium heat, bring to a boil water, butter, salt and sugar. Add flour; with wooden spoon, stir until mixture leaves sides of pan. Remove from heat. Add eggs, one at a time, mixing well until batter is smooth; place pastry in a bag with a 1" round tip and pipe 3 1/2" long cylinders onto cookie sheet. Bake 12 minutes. Reduce heat to 350 and bake 15-16 minutes or until golden. Cool on rack.

Meanwhile prepare custard mixture. Cover; chill.

When completely cooled; cut off tops of eclairs and fill with custard. Melt 2 squares of milk chocolate and spread on the tops of eclairs. Replace tops. Chill until serving time.
