  • 1 package corn muffin mix
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup + 1 Tbsp Colby Jack cheese, shredded
  • 1 egg
  • 1/3 cup milk

Preparation

Step 1

Preheat the oven to 400°F. Spray an 8'' x 8'' baker with cooking spray.

Just combine the corn muffin mix, Parmesan, 1/4 cup of Colby Jack, egg, and milk in a medium-size mixing bowl. Do not over mix. Pour the batter into the prepared dish and bake for 15 minutes.

Remove the cornbread from the oven and sprinkle the reserved Tbsp of Colby Jack on top. Bake 10 minutes more, or until the cornbread is golden brown.
