Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/4 cup chopped nuts
  • 1 large eggs
  • 1/3 cup orange juice
  • 1/3 cup orange marmalade simply fruit
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 1/2 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup orange marmalade simply fruit
  • 1-2 tsp milk

Preparation

Step 1

1. Heat oven to 425F. Spray bottoms of 12 muffin cups with non-stick spray.

2. Combine flour, baking powder, sugar and salt in a medium bowl. Add nuts; mix well. Make a well in the center.

3. Combine egg, orange juice, 1/3 cup marmalade, milk and oil in a separate bowl. Add all at once to the dry ingredients. Stir quickly until moistened. Fill prepared muffin cups 2/3 full.

4. Bake 15-20 mins. cool. Meanwhile, combine cream cheese, marmalade and milk in the bowl of an electric mixer; beat until desired consistency. Frost over cooled muffins.
