Ingredients

  • 12 chicken drumsticks
  • salt, to taste
  • 1/2 cup buttermilk
  • 2 tbsp chipotle hot sauce
  • 1 tbsp fennel seeds, lightly crushed
  • 2 tbsp freshly ground black pepper
  • 2 fennel bulbs, cut in half lengthwise, cored, and cut into 1/4" wide sticks and held in ice water (reserve the fronds)
  • 4 oz gorgonzola dolce
  • 1/4 cup red wine vinegar
  • 1/2 cup extra-virgin olive oil
  • hot red pepper flakes

Preparation

Step 1

Preheat oven to 400. Place the chicken on a baking sheet and season with salt. Bake for 20-25 mins.

In a bowl, stir together the buttermilk, hot sauce, fennel seeds and pepper.

Set up a wire rack over a baking sheet. Remove chicken from oven and immediately toss in the buttermilk mixture. Place on the rack to drain and spoon the remaining mixture over the top.

Preheat grill.

Crumble gorgonzola into a bowl and mash with a fork. Add vinegar and stir until farly smooth. Drizzle in the oil and stir until combined.

Place drumsticks on the hottest part of the grill, cover, and cook, turning frequently for about 10-12 mins.

Transfer drumsticks to a platter and sprinkle with the chili flaks and fennel fronds. Serve with the fennel sticks and dipping sauce.
