Ingredients

  • 1 English cucumber or seeded cucumber (peel, grated with large holes)
  • 1 clove garlic (more to taste), peeled
  • 2 tablespoons extra virgin olive oil
  • 16 ounces of Lebni (or 4 cups yogurt drained)
  • 1 tablespoon chopped mint (more to taste)
  • 1 tablespoon red wine vinegar

Step 1

1. Sprinkle cucumber generously with salt, toss and place in a colander in the sink. Let sit for 30 minutes. Rinse with cold water and squeeze out water.

2. Combine garlic, 1/4 teaspoon of salt and olive oil and grind with a mortal and pestle into paste.

3. Toss the cucumber with the vinegar, then add garlic paste, the 1 remaining tablespoon of olive oil and Lebni. Adjust salt and garlic to taste.

DO NOT make too far ahead .. best eaten within 24 hours or cucumbers will release more water.
