Apple Cake

Ingredients

• 6 eggs
• 1 cup oil
• 2 cups sugar
• 2 cups cake meal
• 2 Tbsp potato starch
• 4 sliced apples
• Juice of 1 lemon
• ½ cup sugar
• 2 tsp cinnamon
• ½ cup nuts
• Cinnamon and sugar to taste

Preparation

Step 1

beat together eggs, oil, 2 cups sugar, cake meal, and potato starch
sprinkle apples with lemon juice
mix ½ cup sugar with 2 tsp cinnamon; add to apples
spread ½ of batter in ungreased 9 x 13-inch pan; spread apple filling and top with remaining batter
sprinkle with nuts and cinnamon and sugar
bake 1 hour @ 350°
