- 4 cups warm water
- 4 ounces fresh yeast
- 1 tablespoon sugar
- 1 5 pound bag high gluten flour
- 2 cups sugar
- 1 1/2 tablespoons kosher salt
- 3 large eggs
- 1 1/2 cups canola oil
- 2 large egg+1 egg yolk+1 teaspoon oil

Preparation
Step 1
1 preheat oven to 300 degrees. open oven door
2 combine water, yeast and sugar place on oven door and cover with a plastic plate.Let stand for 10 minutes.
3 place flour in mixing bowl, remove 2 cups and set aside.
4 mix in sugar and salt and push against sides of bowl leaving a well in the middle.
5 pour eggs, oil and yeast mixture into well and mix well.
add flour as needed
6 brush dough with oil, cover with plastic wrap and a dry towel
7 let rise for 1 1/2 hours or until double in size
8 be mafrish challah
9 braid dough and let rise in greased pans another 45 minutes
10 brush with eggs
11 fill pan with water and leave in oven for 20 min prior to baking
12 bake at 375 for 25 minutes and 350 for 30
