Ingredients
- - chopped veg:
- 1 19 oz. can each Black Beans & chick peas (drained & rinsed)
- 2 sliced gr. onions
- 2 chopped tomatoes (substitute corn or other veg.)
- 1 red or yellow pepper - chopped
- 1 avacado chopped
- 1/4 cup fresh coriander chopped
- - dressing:
- 1 t grated lime rind
- 1/4 c lime juice
- 1/4 scant c veg oil
- 1 jalapeno pepper, seeded & minced
- 1 clove garlic
- 1/4 t each salt & pepper

Mix ingredients for '2', let stand to incorporate flavors.
Mix ingredients for '1', then pour '2 'over top.
