Ingredients
- 1 1/2 lbs. radishes (any kind or a mixture)
- 1/4 cup apple cider vinegar
- 1 tsp. sugar-free dijon mustard (or sugar-free yellow mustard)
- 2 Tbls. chopped fresh parsley
- 2 Tbls. chopped fresh dill
- 3 green onions, thinly sliced
- 1/2 lemon, juiced
- Pinch stevia or xylitol, to taste
- Salt/pepper to taste

For this variation, steam trimmed radishes for 12 to 15 minutes, or until tender. Rinse in cold water. For the vinaigrette, combine all ingredients. Toss radishes with vinaigrette and chill for at least 30 minutes to allow flavors to blend.
