Ingredients
- 1/2 cup peeled, grated fresh beet
- 1 tablespoon sherry vinegar
- 1 avocado, peeled and cubed
- 1/2 cup diced red bell pepper
- 1/2 cup thinly sliced radish
- 1/2 cup crumbled queso fresco (fresh Mexican cheese)
- 1/2 cup fresh cilantro leaves
- 2 limes, cut into 8 wedges each
- 1 pound medium peeled shrimp
- 1/8 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1 tablespoon olive oil
- 8 (6-inch) corn tortillas, warmed

Preparation
Step 1
1. Combine beet and vinegar in small bowl. Place avocado, bell pepper, radish, cheese, cilantro and lime wedges into small bowls.
2. Combine shrimp, salt, cumin, chili powder and oil in a med. bowl.
3. Cook shrimp in a nonstick pan over med. high heat 3 min. on each side, until opaque. Transfer to a serving bowl.
4. Place all bowls and the warmed tortillas on the table and allow everyone to build their own taco.
