- 1 1/4 c. milk
- 1 1.4 c. flour
- pinch salt
- 3 large while eggs + 1 yolk
- 2 tbsp. very soft butter (rub in pans, not the batter)

Step 1
Heat over at 425, whisk milk, flour and salt until just ixed. Mixture will be lumpy. Beat eggs & yolk one at a time until barely incorporated. DO NOT OVER MIX, batter should be lumpy.
Butter muffin pan (or yorkshire pan if you're lucky and have one). Add meat fat in pans. Bake 20 minutes
Reduce oven to 350, add batter and bake yorkshires 15-20 minutes till golden. Don't open oven door.
