Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cinnamon baking chips
  • 1/2 cup walnuts or 1/2 cup pecans
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 eggs

Step 1

Preheat oven to 375 degrees. Spray a non-stick muffin pan with cooking spray.

In a large bowl, combine flour, baking powder, baking soda, and salt; stir in sugars, then cinnamon chips and nuts.

In a small bowl, combine the milk, egg and oil; stir into dry ingredients.

Spoon into muffin cups and bake for 18-21 minutes, or until golden brown.

These were good and a hit with the class I shared these with. I thought the texture was a bit dry, but still quite good. I got 12 muffins and baked them 18 minutes. Thanks for sharing!

Flavorful, moist muffin! Got 10 regular sized muffins, though, instead of the 12.

Had some cinnamon chips to use and was glad I tried your recipe! Used low-fat milk and canola oil. Didn't add any walnuts. Baked at 350 for about 25 minutes. They came out moist and oh so good!

My DS made these for his 4-H County fair. We have put them in the freezer until they need to be judged. But we only need 3 muffins to be judged. I sampled two and wished I would have tried this recipe sooner. OMG they are delicious!! DS and DH agreed with me. I did make the suggestion to him to add 1 teaspoon of cinnamon which he did. This recipe is a keeper and I will be making it a lot more. I have been in search of recipes to use Cinnamon baking chips besides cookies. Thanks for this great recipe!

I didn't follow the recipe exactly. but used it more as a guide line and then added some cinnamon in to the batter...but when I was ready to bake, it I lost my muffin pan and ended up using a bundt pan. But it came out really good with an excellent texture.

These muffins were good, but a bit on the bland side. They needed just a bit of "something" to make them more interesting. I wonder if adding in some cocoa powder would do the trick? The directions were easy to follow. I added the chips as the last step, just out of habit, otherwise I followed the recipe exactly.
