Ingredients
- 4 med potatoes, peeled and quatered
- 1/4 cup hard margarine-not butter it browns too quickly
- 1 cup chopped onion
- 1/4 cup green pepper (can add 1/2 cup green peas)
- 1/4 cup all purpose flour
- 1 t salt
- 1/4 t pepper
- 1/4 t garlic
- 2 cups milk
- 2 -- 71/2 oz cans salmon drained
- Topping
- 2 T butter
- 1/2 cup dry bread crumbs
- 1/4 cup grated Parmesan cheese-you can use shredded
- like 3 cheese mix

Preparation
Step 1
Cook potatoes until tender, drain, cool until you can handle them
Slice 1/2 potatoes into greased 2 qt casserole
Melt marg in frying pan. Add onion and green pepper, peas
Saute slowly until soft
Mix flour, salt and pepper and garlic, stir in milk until it boils and thickens, pour 1/2 sauce over potatoe layer
Remove skin and bones from salmon. Flake and arrange over sauce layer, slice rest of 1/2 potatoes over salmon followed by second 1/2 sauce.
Topping: Melt butter in small saucepan, add bread crumbs and cheese. Stir, sprinkle over all
