Ingredients
- 1-2 heads leaf lettuce, red and/or green
- 1-2 C baby spinach
- 2-3 boiled eggs, peeled and sliced
- 1 pkg bacon, chopped
- 1/4 C sugar
- 2 T white or cider vinegar

Step 1
In large salad bowl, mix salad greens well. Top with eggs.
In med-large skillet, over medium heat, cook bacon pieces until crisp; drain onto paper towels. Sprinkle into salad bowl. Return pan to heat and add sugar to bacon drippings; after sugar has dissolved, add vinegar. BE VERY CAREFUL TO STEP BACK WHEN ADDING VINEGAR because the fumes can sting your eyes and throat. When splattering dies down, taste to determine whether seasoning needs adjustments. Pour over salad and serve immediately.
