  • Icing:
  • 1 cup butter
  • 1 1/4 cup flour
  • 1/4 tsp salt
  • 2 tsp sugar
  • 4 eggs
  • 2 cups pecans (chopped-search for shells)
  • 2 cups brown sugar
  • 1 cup shredded coconut
  • 2 tsp baking powder
  • 1 cup dates (opt.)
  • 3 cups powdered sugar
  • 6 tbsp butter
  • 2-3 tbsp milk
  • 2 tsp vanilla

Preparation

Step 1

Pre-heat oven to 375. Mix until crumbly butter, 2 cups flour, salt, and sugar. Press into 9x13" pan and bake 10-15 minutes. While that is baking mix eggs until well-beaten, pecans, brown sugar, coconut, 1/4 cup flour, baking powder and dates. Spread over baked cookie layer. Bake 15-30 minutes at 375. Cool 15-20 minutes before icing. For icing mix together powdered sugar, butter, milk and vanilla.
