Ingredients

  • 1 lb boneless, skinless chicken breasts, cut in chunks
  • 1 can CAMPBELL'S Condensed Chicken Broth
  • 3 tbsp cornstarch
  • 1/4 cup sugar
  • 1/4 cup vinegar
  • 1 can (8oz) pineapple pieces in juice, undrained
  • 1 medium red and/or green pepper, cut in strips
  • 4 cups hot cooked rice

Preparation

Step 1

Heat a large, non-stick skillet lightly coated with vegetable oil cooking spray over medium-high heat. Add chicken and cook until browned on all sides. Reduce heat to medium. Add mixture of broth, cornstarch, sugar, and vinegar. Stir in pineapple, pineapple juice and pepper strips. Heat to a boil, stirring often. Reduce heat to low.
Simmer covered, until chicken is cooked through - about 5 minutes.
Serve with rice.
