Cheesy Pear Bites with Tarragon Pesto

Ingredients
- 3 large ripe pears
- 1/2 cup fresh lemon juice
- 1 loaf French bread
- 1/2 cup chopped fresh tarragon (8 teaspoons dry herbs)
- 1 1/2 cup chopped fresh parsley
- 2 garlic cloves, minced
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup olive oil
- 1 cup shredded Gruyere cheese (strong - double Fontina as an option)
- 1 cup shredded Italian Fontina cheese
- Freshly ground black pepper to taste

Step 1
Peel, core, and slice pears into bowl, and stir in lemon juice to preserve.
Slice bread in half lengthwise and broil until golden. In a food processor, process tarragon, parsley, garlic, and Parmesan. With the processor on slow speed, gradually add olive oil to form a smooth pesto. Spread on toasted bread. Drain pears well, and arrange on top of pesto. Sprinkle with Gruyere and Fontina, then pepper. Broil at about 8 inches from heat source until cheese begins to melt. Cut and serve.
