Ingredients

  • 1 Box Mochiko Rice Flour (sweet rice flour)
  • 3 cups water
  • 2 cups sugar
  • 6 tsp. powdered cocoa (unsweetened)
  • 1 cup water
  • Extra cocoa for dusting

Preparation

Step 1

In a saucepan, mix sugar and cocoa well. Add 1 cup water and heat to dissolve sugar. Mix flour and 3 cups water in large bowl until smooth. Cover and microwave 5 minutes on high power. Remove and mix well. Return to oven and cook 5 more minutes. Remove. Add cocoa syrup to mochi and mix thoroughly. Pour mixture into greased pan. Cool until firm. Dust top well with cocoa and turn out onto a cutting board. Cut into small squares. Dust in cocoa. Store in airtight container and refrigerate.
