Ingredients
- 1 cup old fashioned oats (not instant)
- 1 cup buttermilk
- 1/2 stick butter
- 1/3 cup packed brown sugar
- 1 large egg
- 1 tsp vanilla
- 1 cup flour
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- Cinnamon-Sugar topping

Step 1
1. Preheat oven to 400F. combine the oats and buttermilk in a bowl and let stand for 10 mins. In a large bowl, cream together the butter, brown sugar, egg and vanilla. Add the oat mixture and stir to blend. Add the flour, baking powder, salt and baking soda and mix well.
2. Spoon the batter into a well-greased muffin pan, filling each cup about 2/3 full. Sprinkle each muffin generously with the cinnamon sugar. Bake in preheated oven for 20-25 mins. Remove and let stand for about 5 mins. Remove muffins and let cool completely. Do not turn pan upside down, this will make the topping fall off.
