Ingredients
- 1/2 onion, diced
- 1/2 green bell pepper, seeded and diced
- 1 stalk celery, diced
- 1/2 large tomato, diced
- 1 tablespoon lemon juice
- 2 tablespoons olive oil, plus extra for drizzling
- Salt and pepper to taste
- 1 loaf French baguette or Italian Bread
Preparation
Step 1
In a medium size bowl, mix the onion, bell pepper, celery, tomato, the 2 tablespoons of olive oil, and lemon juice. Season to taste with salt and pepper.
Cut bread into 1-inch thick slices, drizzle both sides with olive oil and toast in a preheated 450°F oven until golden brown on each side.
Spoon bruschetta mixture on toasted bread and serve.
