Ingredients

    onion, diced

    green bell pepper, seeded and diced

    stalk celery, diced

  • 1/2

    large tomato, diced

    tablespoon lemon juice

    loaf French baguette or Italian Bread

Directions

In a medium size bowl, mix the onion, bell pepper, celery, tomato, the 2 tablespoons of olive oil, and lemon juice. Season to taste with salt and pepper. Cut bread into 1-inch thick slices, drizzle both sides with olive oil and toast in a preheated 450°F oven until golden brown on each side. Spoon bruschetta mixture on toasted bread and serve.
