Baked Steelhead with Lemons and Onions

Ingredients
- 4 skinless steelhead fillets
- 2 large Onions
- 1 tsp. Olive Oil
- 1/2 tsp. Fresh thyme or 1 pinch dried
- 1/2 cup white wine, dry vermouth, or orange Juice
- 2 lemons scrubbed and very thinly sliced.

Preparation
Step 1
Preheat oven to 450 .
Heat the oil in an ovenproof skillet set over medium heat. Add Onions and cook, stirring often, until soft and translucent, about 10 minutes. Stir in thyme and wine, Season with salt and pepper.
Set salmon fillets on top of onions, Lay lemon slices over all.
Bake until the salmon is cooked through, about 12 minutes depending on thickness Discard lemon slices. Serve salmon on the onions
