Ingredients

  • 1 3/4 cups all-purpose flour
  • 3 1/2 cups King Arthur S Style flour or stone ground whole-wheat
  • 2 tsp baking powder
  • 4 tsp baking soda
  • 4 tsp dark brown sugar
  • 1/2 cup wheat germ
  • 1 1/2 cups natural bran - not bran cercal
  • 1 1/4 cups steel-cut oats
  • 2 tsp sea salt
  • 1 quart plus 1/2 cup buttermilk at room temperature

Preparation

Step 1

Preheat oven to 400 degrees
Combine all dry ingredients in large bowl with large spoon-add buttermilk and stir until dry ingredients are evenly moist.
Divide dough equally in two greased 9x5 loaf pans
Bake in middle of oven until golden and crusty-50 minutes. Unmold and cool on wire rack.
