Ingredients
- 1 tablespoon vegetable oil
- 1 small green pepper, cut into 1/2 inch
- 1 tablespoon sliced green onions
- 1 can, [20 ounces] unsweetened pineapple chops, drain [reserve 1/2 cup juice]
- 1 tablespoon low-salt soy sauce
- 1 tablespoon no salt added ketchup
- 1 tablespoon honey
- 2 teaspoons cider vinegar
- I dash turmeric and pepper
- 2 teaspoons cornstarch
- 1 medium tomato, cut into eighths
- 12 ounces of cod fillets or other lean fish, 1/2 inch thick, cut into 1 1/2 inch pieces

Step 1
In a 10 inch skillet, heat oil over medium-high heat. Add green peppers and onion. Sauté until tender. Set aside. In a small bowl, combine reserved pineapple juice, soy sauce, Honey, Vinegar, Pepper, Ginger, and Tumeric. Combine Small Amount of Mixture with Cornstarch. Add back. Add pineapple juice mixture, pineapple and tomato two green pepper and onion. Cook over team-high heat until tomatoes are tender, about 10 min., stirring frequently. Reduce heat to low. Add fish. Stir to combine. Cover and cook about 8 to 10 min., or until fish is opaque. Stirring gently after one half time.
