  • Cookie Dough
  • 1 cup butter flavored Crisco
  • 1 cup brown sugar, packed
  • 2 eggs
  • 1 tsp. vanilla
  • 3 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • ====================================
  • Cinnamon Mixture
  • 4 Tbs. sugar
  • 1 Tbs. cinnamon
  • 4 Tbs. packed brown sugar

Preparation

Step 1

Combine Crisco and brown sugar; beat at medium speed until well blended. Beat in eggs and vanilla until well blended. Combine flour, baking powder, salt and cinnamon and mix. Add to above mixture and mix well.

Turn dough onto a sheet of waxed paper. Spread into a 13x9" rectangle using a rubber spatula. Sprinkle with 4 tablespoons or more of the cinnamon mixture to within 1 inch of edge. Slowly roll up into a log until it is roughly 13" long. Wrap tightly in plastic wrap and refrigerate for 4 hours or overnight.

Heat oven to 450 degrees. Spray cookie sheet with non-stick spray. Slice dough 1/4" thick. Place on prepared cookie sheet. Bake for 8 minutes or until lightly browned on top. Cool on cookie sheets for 4 minutes.
