Ingredients

  • 1 cup all purpose flour
  • 3/4 cup cake flour
  • 1/2 cup plus 2 tbsp. sugar
  • 1/3 cup firmly packed brown sugar
  • 1/4 cup unsweetened natural cocoa
  • 2 tsp. salt
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • 3 tbsp. mayonnaise
  • 1 tsp. vanilla extract
  • 1/2 cup butter, softened
  • 3 eggs yolks
  • 2 tbsp. red food coloring
  • 1/3 cup plus 1 tbsp. buttermilk
  • 1 egg white
  • 1 recipe Kudzu's Cream-Cheese Frosting
  • KUDZU'S CREAM CHEESE FROSTING
  • 1 cup butter, softened
  • 12 oz. cream cheese, softened
  • 1 cup confectioners' sugar
  • 3/4 tsp. vanilla extract
  • In a large mixing bowl, beat butter at medium speed with an electric mixer until smooth and creamy. Add cream cheese, mixing well.
  • Add confectioners' sugar and vanilla. Mix on low speed until creamy and smooth.

Step 1

Preheat oven to 325 degrees. Grease and flour 3 (8 in.) or 2 (9 in.) round cake pans. Set aside.

In a bowl, combine all purpose flour, cake flour, sugar, brown sugar, cocoa, salt, baking powder, and baking soda, stirring to mix. Set aside.

In large mixing bowl, combine mayonnaise and vanilla, mixing well. Add butter and mix on lowest speed of an electric mixer until well blended.

In another bowl, combine egg yolks, food coloring and buttermilk. Add to butter mixture, alternately with flour mixture, at lowest speed, beginning and ending with flour mixture. Increase mixer speed to medium and beat for 7 minutes. Set aside.

Beat egg whites to soft peaks at high speed with an electric mixer. Fold egg white into batter by hand. Divide batter among prepared cake pans.

Bake for 20-30 minutes, or until a wooden pick inserted in the center of each layer comes out clean. Let layers cool in pans for 10 minutes. Invert onto cooling racks and let cool completely.

Frost layers with Kudzu's Cream-Cheese Frosting.
