Ingredients

  • 5 medium onions, sliced thin
  • 2 tablespoons bacon grease
  • 2 lb. chuck, cut in 1 1/2" cubes
  • 2 tablespoons flour
  • salt, pepper
  • thyme
  • margarine
  • 1/2 cup beef boullion
  • 1 cup dry red wine
  • 1/2 lb. fresh mushrooms

Preparation

Step 1

Saute the 5 medium onions and with the bacon grease until brown and then remove.
Brown the chuck cubes well.
Mix the flour, salt, pepper, thyme, and margarine and sprinkle over the beef.
Stir in the beef boullion and dry red wine. Simmer slowly for 2 1/2 - 3 hours, or until meat is tender. If necessary add more boullion and wine (1 part boullion to 2 parts wine) to keep meat barely covered.
Return onions to pan and add mushrooms - Cook for 30 minutes longer, adding liquid if necessary
Serve over rice.
