This recipe is from a San Antonio newspaper. It reminds of the sheet cake I had when I was growing up. It was the best! Great for a crowd.

Ingredients

  • Cake:
  • 2 sticks unsalted butter
  • 1 cup water
  • 1 tsp baking soda
  • 1 tbs vinegar
  • 2 cups sugar
  • 2 cups flour
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 tsp vanilla
  • Reduced-fat Icing:
  • 3 tbs butter
  • 1/4 cup cocoa
  • 4 - 6 tbs milk
  • 1 tsp vanilla extract
  • 2 1/2 cups powdered sugar, sifted

Preparation

Step 1

Cake:
Heat oven to 350 degrees. Combine butter, water in a saucepan and bring to a boil. Let cool. Combine the baking soda and vinegar, and add to mixture. Add sugar, flour, salt, eggs, buttermilk and vanilla and mix well. Pour mixture into a greased 10 by 15 inch sheet pan. Bake about 20 - 30 minutes, until toothpick inserted comes out clean. Remove cake from oven. Prepare icing and spread while hot on hot cake.
Icing:
Combine butter, cocoa and milk in small saucepan. Bring ingredients to a boil, then sift sugar into the pan and mix well. Add vanilla. Spread on cake.
