Seared Steak with Lemon Green Beans

Ingredients

  • 1 1/2 lb green beans, trimmed
  • 2 tbsp butter, divided
  • 1 tbsp fresh lemon juice
  • 12 cherry tomatoes, halved
  • 1 tbsp chopped parsley
  • 1/2 tsp salt, divided
  • 1/2 tsp black pepper, divided
  • 4 (3/4-inch-thick) shell steaks

Preparation

Step 1

In a pot of boiling, salted water, cook beans 7 minutes or until crisp-tender. Drain. Toss with 1 tbsp butter, lemon juice, tomatoes, parsley, 1/4 tsp salt, and 1/4 tsp pepper.

Pat steaks dry. Season with 1/4 tsp salt and 1/4 tsp pepper.

In a large skillet, melt remaining 1 tbsp butter over medium-high heat. Sear steaks until medium-rare, 4 minutes per side. Transfer to plates.

Add 1/2 cup water to skllet and simmer over medium heat about 1 minute, stirring well and scraping up any browned bits from bottom of skillet. Season with salt and pepper, if desired. Top steaks with pan sauce and serve with green beans, and tomatoes.
