Lemonade Cheesecake

Ingredients

• 1 frozen Hill Country Fare deep dish piecrust
• 1 package Hill Country Fare lemon flavored gelatin
• 1 8 ounce package Kraft Philly cream cheese
• 1/2 cup H-E-B sugar
• 1 teaspoon McCormick vanilla
• 1 12 ounce can Hill Country Fare evaporated milk, chilled

Preparation

Step 1

Prepare Hill Country Fare frozen deep-dish piecrust according to baking directions and set aside.


Place Hill Country Fare lemon gelatin in a small microwave-safe bowl with 1/2-cup water. Microwave on high power for 1 1/2 minutes. Add chilled Hill Country Fare evaporated milk to dissolved gelatin and stir to combine. Set mixture in freezer for 10 minutes to chill down.


Meanwhile, combine cream cheese, sugar and vanilla in a large mixing bowl and mix with an electric mixer on high speed until mixture is creamy and smooth (1 minute). Set mixture in freezer for 5 minutes to chill down.


Add the dissolved gelatin mixture to the cream cheese mixture and beat with electric mixer on high speed for 30 seconds.


Pour cheesecake mixture into the prepared piecrust. Cover cheesecake with plastic wrap and chill for 2 hours or until firm.
