GORGONZOLA PATE

Use a mild Gorgonzola or other creamy mild blue cheese for best results. Garnish the pate with walnut halves and serve it with crusty Italian, walnut or rye bread.

Ingredients
- 1/2 lb Gorgonzola cheese 250 g
- 1/4 lb cream cheese 125 g
- 1/2 cup unsalted butter, softened 125 ml
- 2 tbsp sour cream 25 ml
- 1/2 tsp dried tarragon 2 ml
- 1/4 pepper 1 ml
- 1/2 cup chopped toasted walnuts 125 ml

Preparation
Step 1
In blender or food processor, blend Gorgonzola, cream cheese and butter. Stir in sour cream, tarragon and pepper. Stir in nuts. Taste and adjust seasoning, if necessary. Pack into serving bowl. (Pate can be covered and refrigerated for up to 3 days. Let stand at room temperature for 15 to 20 minutes before serving.)
