Ingredients
- 1 lb. pasta, corkstrew like
- 6 Tbsp. EVOO
- 4 garlic cloves, minced
- 1/2 tsp. red pepper flakes
- 2 Tbsp. balsamic vinegar
- 1 lb. cherry/grape tomatoes (halved or quartered)
- 1 lb. fresh mozzarella, cubed
- 1/2 C. loose-packed fresh basil, chopped
- salt & pepper

Preparation
Step 1
Cook pasta according to direction on package. Drain well. Rinse with cold water. Drain again. Meanwhile, in small skillet, combine EVOO, garlic and red pepper over medium-low heat. Warm oil slowly and let infuse with garlic and chile flavors, about 5-10 minutes. Set aside to cool slightly. Add pasta to large bowl. Toss with oil mixture, vinegar, tomatoes, mozzarella and basil until evenly combined. Season with salt and pepper. Serve cold or at room temperature.
