Orecchiette w/ Sausage and Peppers

Ingredients
- 2 red bell peppers, sliced
- 2 yellow bell peppers, sliced
- 1 lb. orecchiette (short pasta)
- 2 tsp. EVOO
- 1 lb. sweet Italian sausage
- 1 Tbsp. butter, cut up
- 1/3 C. parmesan cheese, grated

Preparation
Step 1
In a large pot of boiling salted water, cook the pasta until al dente according to the package instructions. Drain, reserving ½ cup of the pasta water. Meanwhile, heat the oil in a large skillet over medium heat. Cook the sausage, breaking it up with a spoon, until browned, 7-10 minutes. Add the peppers; cook until heated through. Transfer sausage mixture to a large bowl; add the pasta, butter, reserved pasta water and cheese. Season with salt and pepper. Toss to combine.
