Ingredients
- 1/4 C. packed brown sugar
- 1/4 C. soy sauce
- 2 Tbsp. lime juice
- 1/4 tsp. cayenne pepper
- 1/4 tsp. curry powder
- 3-4 garlic cloves, minced
- 1 tsp. ginger, grated
- 8 boneless skinless chicken thighs

Preparation
Step 1
Combine everything but chicken in a small bowl. Whisk to dissolve brown sugar. Place marinade and chicken in a ziplock bag for a minimum of 4 hours, or longer. Grill for 5-10 minutes on each side depending on thickness. Garnish with sliced green onions.
Serve with fried rice (Rumbi’s style).
