Wild Rice and Turkey Stuffed Pork Loin Roast

Ingredients
- Wild Rice Stuffing:
- 1-1/2 lb. pork loin roast, butterflied
- 2 tsp. ghee (clarified butter)
- 1/2 chopped celery
- 1/2 chopped onion
- 1 cup uncooked wild rice
- 1 clove minced garlic
- 2 cups fat-free, less-sodium chicken broth
- 1/4 cup dried cranberries
- 1/4 cup chopped pecans, toasted
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Glaze:
- 1 Tbls. honey
- 1 Tbls. melted butter
- 1 tsp. Dijon mustard
- 1/4 tsp. dried rosemary
- 1/4 tsp. dried thyme
- 1/4 teaspoon ground grains of paradise (or black pepper)
- Turkey stuffing:
- 1/2 lb. ground turkey
- 1/4 cup chopped onion
- 1 clove minced garlic
- 1 egg
- 1/8 tsp. hickory seasoning or liquid smoke
- 3 rashers (slices) of uncooked bacon, cut small
- 2 Tbls of oats
- 1 Tbls. finely chopped fresh sage (or 1 tsp. dried sage)
- 1/4 tsp. salt
- 1/4 tsp. ground grains of paradise (or ground back pepper)

Step 1
Prepare wild rice stuffing, as seen below. While waiting, prepare the remaining other items.
Wild Rice Stuffing:
Add ghee to medium sauce pan. Add celery, onion, wild rice, and garlic; sauté 3 minutes. Stir in broth; bring to a boil. Cover, reduce heat, and simmer 30 minutes. Stir, cover,reduce heat to low, and cook for 35 minutes or until liquid is absorbed. Remove from heat; let stand, covered, 10 minutes. Stir in cranberries and pecans.
Turkey Stuffing:
In a medium bowl, mix ground pork, onion, garlic, egg, hickory seasoning, bacon, sage salt and grains of paradise. Set aside turkey mixture.
Glaze:
Mix honey, butter, mustard, grains of paradise, rosemary, thyme, grains of paradise in a small dish. Set glaze aside.
Butterfly the pork loin and lay it flat on a piece of wax paper or plastic wrap. This will help you roll the pork. Sprinkle lightly with salt and pepper.
Spread turkey stuffing on pork.
Spread 1/2 wild rice stuffing on turkey stuffing. Reserve the remaining rice.
Roll pork tightly, using the plastic wrap or wax paper to support is as you roll. Place pork roll in a baking dish that lightly greased.
Brush 1/2 of glaze on to pork roll. Bake @ 325 degrees for 60 minutes or until the internal temperature reaches 165 degrees. Brush the rest of the glaze on the pork after 30 minutes of baking and with juices in the pan every 5 minutes. This will improve the flavor, texture and browning.
To serve, place the pork on a serving dish and distribute remaining rice around the pork.
