Ingredients
- 1/3 cup (75ml) chopped onion
- 2 cloves garlic, finely chopped
- 2 tbsp (25 ml) olive oil
- 6 cups (1.5 l) cubed peeled potatoes
- 1/2 cup (125 ml)sour cream
- 1/4 cup (50 ml) mayonnaise
- 1/4 cup (50 ml) whipping cream
- 2 tbsp (25 ml) butter
- 3/4 tsp (3 ml) salt
- 1/4 tsp (1 ml) freshly ground pepper
- 1/4 tsp (1 ml) freshly ground nutmeg

Preparation
Step 1
Saute onion and garlic in oil until tender, about five minutes; set aside. Cook potatoes in boiling salted water until tender; drain. Add remaining ingredients (sour cream through nutmeg). Using low speed of an electric mixer, beat mixture for one minute or just until smooth.
Do not over beat. Add onion mixture and continue to beat on low speed for 30 seconds. Refrigerate for up to 24 hours. Reheat, covered, in a microwave-safe container in a microwave oven on medium, stirring occasionally until hot, about five to sever minutes.
