Ingredients
- 1 lb red beans - washed
- 1/4 cup dry onions or 1/2 cup fresh
- 1/8 cup minced garlic - dry or fresh
- 2 teaspoons oregano
- 1/3 cup parsley
- 1/8 teaspoon cumin
- 2 tablespoons cayenne pepper (or less)
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- 1/2 teaspoon crushed red pepper (or less)
- 1/8 teaspoon cilantro (dried or fresh)
- 1 teaspoon chervil (can omit - then add more parsley)
- 1/4 to 1/2 teaspoon thyme
- 2 tablespoons basil
- 1 lb smoked sausage (Hillshire Farms)
- 2 tablespoons Filé (Gumbo Filé)
- 1 teaspoon liquid smoke
- 1 1/2 to 2 cups instant brown rice

Preparation
Step 1
Add ingredients beans through basil to crock pot with just enough water to keep the beans covered. Cook on low overnight.
In the last two hours, add the smoked sausage.
In the last hour, add the Filé and liquid smoke.
Add instant brown rice
(cornstarch may be added as a thickener if needed)
