  • 2 cups heavy cream
  • 8 tablespoons butter

Step 1

Melt all the ingredients in a heavy saucepan. Cook over medium high temperature, whisking occasionally to incorporate the melting butter into the cream. Do not let the butter separate or the sauce will not work. Quickly bring to a boil, stirring occasionally, then turn down heat and continue cooking at a low boil (with periodic bubbles breaking the surface) and whisking occasionally so it doesn't burn on the bottom. Cook about 30 minutes, until the sauce thickens. Serve warm over bread pudding.
