This recipe was given to me from University of Incarnate Word. It goes great with spanish rice and warm flour tortillas.

Ingredients
- 1 1/2 lb beef tips or stew beef cut into small pieces
- 2 tbs all-purpose flour
- 1 tbs evoo
- 1 medium spanish onion, chopped
- 1 jalapeno cut into small pieces and seeded
- 1 1/2 cups beef stock
- 1 tbs tomato paste
- 2 tsp ground cumin
- 1/2 tsp chili powder

Step 1
Preheat oven to 325 degrees. Dust the beef with the flour. Warm oil over high heat in a dutch oven. Brown the meat quickly. Add the remaining ingredients and bring the beef mixture to a simmer on the stove. Cover the pot and place in the oven. Stir every 30 minutes, adding small amounts of stock if needed. It should be thick, without much liquid when done. Bake for 2 1/2 hours, until the meat is falling apart tender. Serve warm.
