Ingredients

  • 2 pounds new potatoes, cut into 1-inch pieces
  • 1/3 cup olive oil
  • 1 tablespoon chopped rosemary leaves (or 1 teaspoon dried)
  • 2 tablespoons lemon juice
  • 1 teaspoon grated lemon zest
  • Sea salt and pepper

Step 1

Preheat oven to 400F.

In a large bowl, combine olive oil, rosemary, lemon juice, and salt and pepper to taste.

Add potatoes and toss to coat.

Transfer to a roasting pan and roast, stirring occasionally, for 30 to 40 minutes or until golden.

Toss with lemon zest and adjust seasonings, if necessary, before serving.
