Ingredients
- 2 pounds new potatoes, cut into 1-inch pieces
- 1/3 cup olive oil
- 1 tablespoon chopped rosemary leaves (or 1 teaspoon dried)
- 2 tablespoons lemon juice
- 1 teaspoon grated lemon zest
- Sea salt and pepper

Preparation
Step 1
Preheat oven to 400F.
In a large bowl, combine olive oil, rosemary, lemon juice, and salt and pepper to taste.
Add potatoes and toss to coat.
Transfer to a roasting pan and roast, stirring occasionally, for 30 to 40 minutes or until golden.
Toss with lemon zest and adjust seasonings, if necessary, before serving.
