  • 1 1/4 cups chocolate wafer crumbs
  • 2 tbsp butter, melted
  • 1 egg white
  • 4 oz light cream cheese, softened
  • 2 eggs
  • 1/3 cup cocoa
  • 1 can (300ml) low fat sweetened
  • condensed milk
  • 1/4 cup chocolate ice cream topping
  • 1 tsp vanilla
  • 1/4 tsp peppermint extract
  • 1 cup whipping cream, whipped
  • Shaved chocolate mint thins

Preparation

Step 1

wrap the outside of a greased 9 inch(23 cm) springform pan with foil. To prepare crust, combine crumbs, butter and egg white. Press crumb mixture into the bottom of prepared pan. Using medium speed of an electric mixer, beat cream cheese until fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in the next 5 ingredients (cocoa through peppermint extract) just until mixture is smooth. Pour mixture over prepared crust. Bake at 350 °F (180 °C) for 45 minutes or until knife inserted in center comes out clean. Cool on a rack. Cover and refrigerate for a at least 4 hours or overnight. To serve, spread whipped cream over tart and sprinkle with shaved chocolate. Do not freeze.
