Combine egg whites, sugar, and cream of tartar. Mix on high speed for 7 to 10 minutes. Royal icing hardens quickly, so keep the bowl covered until ready to use!

I set out candy in multiple bowls in the center of the table and give everyone a stack of graham crackers. Place bowls of Royal Icing in locations that are easy for all children to reach, and start building.
