Ingredients
- 1/3 cup flour
- 1 tablespoon paprika
- 2 teaspoons chili powder
- 1/2 teaspoon freshly ground black pepper
- 4 thin, skinless white fish fillets sumac has sole, cold, or flounder (6 pounds each)
- 1 tablespoon vegetable oil
- orange peel strips for garnish

Step 1
1. On a sheet of waxed paper, combine flour, paprika, chili powder, and pepper. Mix well.
2. Dredge fish in flour mixture, shaking off excess; turning to coat. In a large non-stick skillet, heat oil over medium-high heat.
3. Add fish to skillet. Cook fish, turning once, until fish become opaque and flakes easily when tested with a fork, about 5 minutes.
4. Place fish on individual serving plates. Garnish with orange peel strips. Serve immediately.
